Remember, last year you had to go to Frédéric Boulay's boulangerie-pâtisserie Boulay in Beaumont-sur-Oise. This year, you'll have to go to Isle-Adam to be sure of a treat. It's the bakery-pâtisserie Aux 3 Petits Choux, run by Sylvain Le Maux, which wins this prestigious award in the employers category. A great address for frangipane lovers!

Sylvain Le Maux was crowned winner on December 4, 2024, at a ceremony held at the Chambre des métiers et de l'artisanat (CMA) in Cergy. The competition, which brings together craftsmen, employees and apprentices every year, celebrates the expertise and creativity of the département's bakers. More than 100 candidates competed in this year's competition, and the jury praised thetechnical excellence and fine taste of the creations presented.

Sylvain Le Maux's success is no accident. This talented craftsman is no stranger to awards. Back in 2024, he won second place in the national competition. His frangipane galette captivates with its airy puff pastry and generous filling, a perfect balance between tradition and modernity.

The competition also honored other promising talents. In the salaried category, Lotfi Ait Hamouda, from La Pelle et la Toque bakery, impressed with his inventive galette. Among apprentices, Amine Bibi, from La Maison Héloïse, stood out, confirming that the next generation is assured.
