Bouillon République, the bubbling French address

Bouillon République has finally opened its doors and, like its big brother Bouillon Pigalle, offers a host of traditional French dishes at very affordable prices.

Something new in République! After delighting Parisians with deliveries during the various confinements, Bouillon République finally opened its doors in September. Opened in place of the Alsatian institution Jenny, renowned for its gargantuan sauerkraut, Bouillon République retains the old-world charm of its predecessor, with carved wooden panels, floral carpeting and globe lamps.

But now, the formula has changed. Gone are the mountains of charcuterie and the kilos of cabbage, and now this little brother of Bouillon Pigalle follows in the footsteps of Parisian bouillons , offering traditional French cuisine that's affordable for all pockets.

On the first floor, on one of the large tables ideal for groups of friends, or upstairs, on a small, more confidential table, you'll settle in amid the general hubbub heralding a good time. On the à la carte menu, starters don't exceed €9, including the traditional eggs mayonnaise (€1.90), also available in a truffled version, leek vinaigrette (€3.40), marrow bone (€3.80), half-dozen oysters (€6) and the unmissable snails with their maître d'hôtel butter (€7).

It's a tough choice when it comes to dishes, as these traditional offerings remind us all of good times spent with the family, whether it's the Jenny sauerkraut in homage to the place's former life (9.80€), the onion soup au gratin with Cantal cheese (8.50€) that is the envy of so many tourists, the duck confit and Sarlat potatoes (11.50€) or, of course, the knife sausage and mashed potatoes (8.90€).

For our part, we opt for the haddock poché à l'anglaise au beurre blanc (13.50€), very generously served and original à la carte with a bouillon, and for the unmissable boeuf bourguignon (9.80€) accompanied by coquillettes. A bottle of Ventoux AOP (10.20€!) later, we're ready to move on to the desserts, also very traditionally inspired: lemon tart (3.60€) on one side, ile flottante with pink pralines (3€) on the other. It's a no-brainer.

In short, you've got it: at Bouillon République, you'll enjoy a multitude of comforting dishes, ideal for spending a dream winter, all for a low price. The solution for a generous, home-cooked meal made from the finest ingredients for less than €20 per person with starter/main course/dessert!

Information for groups, large or small, booking a table at Bouillon République: The restaurant won't let you in until you've booked your table in full. So be sure to arrive on time, so that your friends don't have to wait in the cold or rain for long minutes.
