All are accompanied by banchan, the traditional small plates of cold dishes, such as lotus roots, pickled radishes and a bowl of white rice, not forgetting the inevitable kimchi, the spicy fermented cabbage that is the basis of every good Korean meal.
The other star of Korean cuisine is, without doubt, bibimbap, a dish served in a hot bowl, in which vegetables, meat and egg cover a base of glutinous rice; the nutritious dish par excellence! But if bibimbap is popular in France, it's bossam that wins the day in South Korea: boiled pork cut into thin strips, eaten with kimchi, wrapped in a leaf of lettuce or blanched cabbage.
