Abbaye des Vaux de Cernay, this historic gem 45 minutes from Paris nestled in the Vallée de Chevreuse, recently reopened as a luxury hotel under the management of Paris Society. Founded in 1118, this Cistercian abbey celebrates 900 years of rich and tumultuous history. Its recent transformation by Paris Society has preserved this important heritage while reinventing it for modern comfort.
The estate, managed by Laurent de Gourcuff and redesigned by Cordélia de Castellane, now offers 147 rooms and suites. These accommodations are divided into three room categories, two suite types, and five signature suites, located in different areas of the estate such as L'Abbaye, Les Haras, La Ferme des Vallées and several Pavillons. The four pavilions, including Pavillon des Sources, Pavillon d'Honneur, Pagode and Cottage, are ideal for stays with family or friends.
On the dining front, the Abbey offers a varied gastronomic experience with six dining venues: Les Chasses, L'Auberge, Le Réfectoire des Moines, La Trattoria (opening in 2024), Jame's Bar and Betty's Bar. Each restaurant offers a unique ambience and cuisine, ranging from traditional high-end fare to generous dishes for sharing, not to mention sumptuous weekend brunches.
Guests and restaurant patrons alike can also relax at the world-renowned heated pool and SPA, and enjoy a host of outdoor and leisure activities. These include tennis, yoga, an exceptional gaming room with free access, a cinema, boating and pedal boating...
L'Abbaye also boasts an exclusive boutique, offering a selection of ready-to-wear, accessories, jewelry, watches, tableware, gourmet products and lifestyle items. The boutique blends l'Abbaye's own creations, vintage pieces, and exclusive collaborations with renowned brands such as Aigle, Bernardaud, Tartine et Chocolat, and Mellerio.

The dovecote, a typical feature of rural estates of the time, reflects the importance of communication and resources in the running of the abbey. Its preservation helps us to understand the practical and economic aspects of monastic life.
Finally, the Saint-Thibault fountain, not only a work of art in its own right, but also an example of the engineering and importance of water in Cistercian abbeys. It symbolizes the connection between the monks and their natural environment, playing a crucial role in their daily activities.
