In keeping with the traditional Yule log, the Acide patisserie wanted to retain its original shape while adding its own personality. It was young chef Jonathan Blot who came up with the idea, in a nod to the origin of the fruit tree which, as tradition dictates, burns in the fireplace at Christmas time.
He has therefore created a dessert based on the "Acide" fruit tip, featuring the citrus fruits that are so dear to him.
The recipe: lime and yellow lemon cream, grapefruit pain de gêne, yuzu confit, softened by a creamy lemon honey mousse. The Graffiti log is resolutely fuitée.
Jonathan Blot has also thought of chocolate lovers by creating a chocolate version, boosted with a caramel crèmeux with fleur de sel and a Piedmont hazelnut praline.
This year's selection of top-of-the-range artisan products also includes: fresh wild yuzu juice, organic Sicilian lemon, the rare IGP Piedmont hazelnut, Samana grand cru Caribbean chocolate, Guérande fleur de sel caramel and roasted rice crisp.
After meeting with young graffiti artist Mateo Garcia, author of the new fresco adorning the rue du Bac wall, the young chef was inspired by urban art to sign these two hand-painted Graffiti logs.
