Winter arrives at Le Grand Quartier, with the opening of the winter terrace of this 10th arrondissement hotel until next March. Babines, the hotel's restaurant, is set in its 300m2 inner courtyard, where it unveils a small village of 5 cosy, convivial chalets, taking us straight down the ski slopes.
Inside each chalet, a large table d'hôtes welcomes groups of up to 8 guests to enjoy a classic ski vacation dish: Swiss fondue! Chef Théophane Eymard's Swiss fon due, made with Swiss Gruyère, Vacherin Fribourgeois PDO and white wine, is available in 3 recipes at Grand Quartier: plain (€25/person), with morels (€30/person) and with truffles (€38/person).
It's accompanied by Mamiche bread, green salad, a selection of French cured meats (dry-cured ham from Savoy, Rostello ham with truffles from Umbria, coppa from Corsica and viande des grisons from the Swiss Alps), gherkins, pommes grenaille, pan-fried mushrooms with parsley and roasted pommes grenaille.
In the glasses, sommelier Nicolas Rebut has selected organic and biodynamic wines from Savoie and Jura, as well as mountain spirits such as Chartreuse and Génépi. At the end of the meal, if you still have a little room, you can indulge in a chocolate mousse, a crème brulée to share or a chestnut cream.
Please note that your chalet can be reserved for 6 or more guests; below that, you'll have to share it. How about a little Swiss fondue? The chalets offer two services, one at 7:30pm, the other at 9:30pm!
