This ice-cold galette des rois is made from pure butter puff pastry, under which an almond ice cream, melting meringues and almond dragées are hidden. To make the difference, Emmanuel Ryon tells us that it should be eaten warm, after a short time in the oven, to savor the richness of the combinations and textures.
This galette glacée serves 5 and costs €32.
Une Glace à Paris is also offering a traditional galette and a brioche des rois for this 2018 Epiphany.
For the classic galette, the chefs honor the famous frangipane revisited by Emmanuel Ryon, with golden puff pastry, almond cream with vanilla and orange blossom flavors.
And don't miss the moist Brioche des rois à la fleur d'oranger, with candied fruit and vanilla. This gourmet creation is topped with an almond crunch.
As for the beans, the patisserie has slipped a numbered Une Glace à Paris 2018 bean into each galette.
