We've already told you aboutRayonnance! This pastry shop is a hit in the 9th arrondissement ofParis. Behind this gourmet jewel are Yuki Hayato and Lumi Hachiya, two talented Japanese pastry chefs. Their meeting in 2018, in the kitchens of the Michelin-starred restaurant Pages, was the starting point for their joint adventure. After winning the hearts of gourmets during a residency at Bistrot Pergo, they opened their first address, Rayonnance, in 2023. Here, Yuki busies herself in the kitchen, while Lumi greets customers with a warm smile, far removed from the snobbery that might be feared in some haute patisserie establishments.
And we're not the only ones to appreciate it, since this galette came in 10th place in the competition for the best Galette des Rois in Greater Paris. A little oversight in the compulsory ingredients earned them this little downgrade, the tooth fairy tells us, but for sure, it's worth the detour. Everything is there, from the crispness of the puff pastry that remains melt-in-the-mouth, to the generous frangipane with a good taste of rum.
With its porcelain bean and origami crown, this galette is as beautiful as it is irresistible. Two formats are available: for 5 people (€38) or 8 people (€58).

In a short space of time, Rayonnance has become a benchmark for sweet tooths, thanks to its ability to revisit classics with elegance. The galette des rois is proof of this, and every bite is a reminder of why this patisserie lights up the 9ᵉ arrondissement of Paris.
