They're popping up all over the capital, each promising to make our mouths water and our taste buds tingle. Whether unusual, traditional, themed or inviting to travel, pastry shops are there to delight us, both visually and in terms of taste.
So when a new address is opened in Paris, it's bound to arouse curiosity. A curiosity that sometimes turns into a real crush. That's what happened with the Rayonnance patisserie. Open since September 20, 2023, this new gourmet spot has taken up residence in the heart of Paris's 9th arrondissement.
Behind the birth of this little patisserie, there's above all the story of a meeting: that of Yuki Hayato and Lumi Hachiya. It all began in 2018 at the Michelin-starred restaurant Pages. While Yuki worked in the kitchen as pastry chef, Lumi worked in the dining room as manager. Over time, Yuki and Lumi became such good friends that in 2022 they decided to embark on a new adventure: opening their first patisserie in Paris.
But they had a long way to go. So, while visiting dozens of premises in search of the nugget they were looking for, Yuki and Lumi were welcomed and hosted at Bistrot Pergo in the 16th arrondissement. Here they offer their pastries, as well as madeleines, financiers, brioches, cakes and, of course, cakes for a thousand crêpes.
After several months of searching, it was finally in Paris's 9th arrondissement that Yuki and Lumi opened their very first address together: the Rayonnance patisserie. While Yuki is busy in the kitchen behind a glass door, Lumi is in the store, just behind the counter where you'll discover no less than 7 pastries, each as tempting as the next.
But be warned: although Yuki and Lumi are of Japanese origin, don't expect to devour an assortment of Japanese specialties. At Rayonnance, French pastries take pride of place with, for example, the essential " gâteau Chocolat - Tonka ", featuring a chocolate walnut cookie, chocolate ganache with Tonka beans, coffee chantilly, cocoa nougatine and caramelized hazelnuts. Discover also the " Madagascar vanilla cake " , with frangipane cream, white chocolate ganache and vanilla chantilly, or the " Chiboust Caramel-Poire " , with pear clafoutis, Chiboust caramel cream and pear jelly.
Our favorite is the seasonal " Tarte Figuier " , with its fresh roasted figs, cinnamon almond cream, blackcurrant jam and fig leaf chantilly. Gourmet and refined at the same time, a real treat!
The patisserie also offers two Japanese-influenced cakes, including the excellent " Saint-Honoré au Hojicha " , with a sweet chocolate pastry base, a delicious and delicate chocolate cream with hojicha (roasted green tea), hojicha chantilly and caramelized walnuts with Muscovado to sublimate the whole. Our second favorite is this revisit of the traditional Saint-Honoré!
And let's not forget the mille crêpes, still one of the house's must-haves! Of course, other gourmet proposals will be added to the shop window over the coming months, according to the season.
But Rayonnance patisserie doesn't stop there! Yuki and Lumi also offer their famous travel cakes (lemon cake, Madagascar vanilla cake or caramel and pomme Tatin cake), as well as rarer delicacies such as Romias orange blossom shortbread, chocolate shortbread, Engadine walnut pies and Bostok, a brioche specialty.
All these delicacies make us want to come back and push open the doors of the Rayonnance patisserie to discover new flavors. A word of advice: don't delay in discovering this patisserie before it's taken by storm!
