Among the new bakeries and patisseries delighting the capital, we're off to discover Gonflé, Timothy Breton 's boutique that replaces Bara. A new partnership with a specialist in the hotel business has enabled the chef to expand, and with a wider choice, including savoury dishes, we tell you all about the gourmet discoveries that await you.
Timothy Breton, who has worked at the Plaza Athénée and the Café de l'Homme, and whom some may have discovered through his gourmet creations at Bo & Mie, has what it takes to make your day. In association with Groupe ILO collection, which currently owns 4 hotel boutiques in Paris including Citizen on Canal Saint-Martin, Maison Pigalle, Oratio and Rendez-vous Batignolles, he can now expand his range with a new address on rue Saint-Maur. We'll be telling you all about this new bakery-pastry shop and tearoom very soon.
Equipped with a larger kitchen, this new address will supply breads and other specialties to the small boutique at the Gare du Nord, where Timothy was beginning to run out of space to develop his range. At the same time, it will provide the group's various hotels with genuine gourmet, artisanal viennoiseries.
At Gonflé, you'll find a delicious range of viennoiseries, including croissants generously filled with cream or raspberry, plump cruffins in a variety of flavors, Swiss breads, cinnamon rolls, a variety of brioches and the obligatory kouign-amann when you're called Breton.
Also on the menu are madeleines of all kinds, and a host of plump cookies including the new caramel brookies and black cookies with pink pralines. In addition to the classic chocolate, buckwheat and caramel cookies, there are also ephemera that will be beautifully topped with toppings.
On the pastry side, we have the traditional chocolate eclairs and religieuses, as well as more original eclairs that are not lacking in delicacy, flan, cheese cake, lemon tart and an excellent Paris-Brest that's not short on praline. We also offer a delicious seasonal Mont Blanc tart.
On the savoury side, he has recently developed focaccias filled with vegetables, pesto and fresh tomatoes, which are available in a sweet version with apples, for example. There are also savoury rolls and a new range of sandwich loaves. Breads and baguettes will soon be gracing the bakery's shelves.
A terrace will also be available in fine weather, allowing you to enjoy a delicious pastry in the quiet pedestrian street near the station. If you have to wait for a train, you might as well do it while enjoying a delicious viennoiserie!
As for prices, count on 1.50 euros for a pain au chocolat and between 1.30 and 2.60 euros for other viennoiseries. An éclair costs 4 euros and a Paris-Brest 6 euros. The bakery-pastry shop is open every day except Sunday, from 7am to 7pm, and closes early on Saturdays at 5pm.
