Maxime Frédéric, current 3-star pastry chef at Cheval Blanc, who has worked with Cédric Grolet at Le Meurice and at the Four Seasons Georges V, has been named Gault & Millau Pastry Chef of the Year 2022. It goes without saying that his great talent is recognized and well worth the detour. While you could already enjoy some of his creations at Le Limbar, Plénitude or Le Tout Paris, you can now go along the street to the Café Louis Vuitton. There, in a lush tropical garden setting, surrounded by bay windows overlooking the Seine and the Samaritaine, the address offers a prime view of Paris.
For the first time and in homage to his Norman origins, the Pastry Chef unveils his new savory lunch menu, exclusively for Café Maxime Frédéric at Louis Vuitton. The dishes, delicious tributes to French tradition and the richness of the local terroir, complement the Pastry Chef's exquisite dessert menu. Illustrating the House's expertise in excellence, this tempting menu is designed for sharing, as is a brunch to be discovered every day from 12pm to 3pm by reservation (savory menu only).
Our lunch opens with a stylish, crispy waffle adorned with the Fleur de Monogram, which can be topped with lemon tzatziki or caviar - a real treat!
This is followed by the egg collection, three recipes made from the colorful eggs of rare hens from Maxime Frédéric's family farm. The eggs - plain, chanterelle and truffled - are accompanied by a brioche and monogrammed mouillette, to be dipped without moderation in the egg ceramic to collect the candied yolk at the bottom. Regressive and so much fun!
Meanwhile, a sublime bread trolley, made like a unique trunk, invites itself to our table to offer us 4 varieties, each as tempting as the next: cereal, gluten-free, ...
Then a delicate tartlet with a checkerboard pattern, garnished with lobster and fresh vegetables, makes its entrance. On the pastry side, an exclusive selection of sweets, as exquisite as they are elegant, offer a symphony of flavors with nostalgic notes. Irresistible!
The dessert menu, which changes with the seasons, currently features a precious lemon meringue pie, not forgetting the must-try items - the cloud-sweetvanilla entremet, the woody chocolate from Peru and Vietnam, and the hazelnut praline buckwheat - which will make you melt with pleasure.
