If there's one chef who can't wait to get back in the kitchen, it's Arnaud Donckele, who is eagerly awaiting the opening of Cheval Blanc Paris and its gourmet table, Plénitude, scheduled for September 7, 2021. For more than two years, the Michelin-starred chef, who previously worked at Cheval Blanc Saint-Tropez, has been fine-tuning his menu and preparing for the long-postponed opening of one of the capital's finest jewels.
Located on the second floor of the 5***** hotel, with an unobstructed view of the Seine "at your fingertips", Plénitude is an intimate setting, ideal for a timeless getaway. The soft, luminous decor, with its hints of yellow and orange, and comfortable seating, hint at the beginnings of an extraordinary experience. You'll feel like you're on cloud nine, far from the hustle and bustle of Parisian life.
Arnaud Donckele, winner of three MICHELIN stars and 19/20 from Gault et Millau, has taken up residence at Cheval Blanc Paris, and is already planning to offer a cuisine based on fresh, seasonal produce, with the emphasis, as usual, on short circuits and local suppliers.
To complete the experience, pastry chef Maxime Frédéric, a young pastry prodigy renowned internationally for his airy desserts, offers to end a delicious meal on a pleasantly sweet note.

Can an establishment claim to be the best restaurant in Paris? If so, then Plénitude is clearly a dream candidate, as we were so won over by the experience.
Arnaud Donckele awakens haute gastronomy, the kind that invents, surprises and fascinates. His work on sauces (you are invited to savor them separately, before each dish) sets the tone, and prepares you for an unparalleled gustatory and emotional voyage.
Plénitude is also a journey for the senses. From the Chef's table, you'll smell the intoxicating aromas wafting from the kitchen, where you'll hear the brigade hard at work. You'll touch the sublime solid wood of the cellar, reworked to the millimeter to create this iconic bespoke corridor. Finally, the restful decor contrasts with the Seine and Paris, offering you a unique moment of... plenitude.
Because every detail is the fruit of teamwork in perfect harmony, Plénitude unquestionably honors haute cuisine in Paris and France.
