This unique dessert, both a work of art and a treat for the taste buds, unveils itself as a 75% dark chocolate sleigh guided by a horse, ready to cross the imaginations of young and old alike.
The finely sculpted horse takes flight, while the sleigh that follows pays tribute to the establishment's Art Nouveau architecture with meticulous floral details.
Inside the sleigh, a sweet treasure awaits us: a vanilla rice pudding entremets, wrapped in an almond ganache, embellished with mandarin confit and orange caramel. The flavors evoke the sweetness of the chef's childhood, inspired by teurgoule, a Normandy specialty made with rice and cinnamon. We love the sweetness and regressiveness of the rice pudding, which combines perfectly with the roundness of the ganache and the light pep of the mandarin and orange caramel.
