Having tasted these chocolate works of art, we can confirm that Jean-Paul Hévin transforms Christmas into a truly sensory experience. The Corail log, with its poetic design inspired by the ocean floor, seduces with its textures: a crunchy hazelnut praline, a chocolatey pain de Gênes cookie and a Grand Cru dark chocolate mousse from Peru, all set on a base of caramelized almonds. Each bite is a perfect balance of sweetness and intensity. Count €67 for 6 people for this exclusive creation.
The"Bûche Cameroun", a tribute to African cocoa, impressed us with its complexity. Hazelnut gianduja with alfalfa seed blends harmoniously with Grand Cru dark chocolate mousse from Cameroon and vanilla crème brûlée with fleur de sel. This dessert reveals a wealth of flavors that transports us straight to the heart of the cocoa plantations. Count 67€ for 6 people.
We also present the"Sagittarius" chocolate log, a gourmet creation available for 58€. It features a delicious hazelnut flaky gianduja, an almond and dark chocolate cookie delicately soaked in a laurel infusion, and an intense Grand Cru dark chocolate mousse from Cameroon, made from exceptional beans from the Hévin-Nkolossang center. Finally, to end on an icy note, we recommend the Bûche de Noël glacée Yuzu "Vent d'Hiver", an exclusive, limited-edition creation. Its delicate composition combines chestnut cookie, yuzu sorbet, chestnut mousse, French meringue and vanilla chantilly, all sublimated by an elegant decor of dark chocolate fir trees.
