At the Burgundy, not far from Place de la Concorde, Pastry Chef Léandre Vivier has come up with a final bouquet... in the truest sense of the word! For Christmas 2024, he's unveiled a refined, floral bûche that shakes things up while preserving the spirit of the festive season. The "Fleurs d'Hiver" log is unveiled in a bouquet of ranunculus, as if crystallized by frost, evoking an enchanted winter garden. A fine, subtle reinterpretation of this Christmas tradition.
In principle, the log is inspired by Mont-Blanc. However, without departing from the gourmet approach, Léandre Vivier has created a lighter, more floral take on this great pastry classic. In doing so, he manages to maintain the link between the aesthetics of the log and its flavors. The chestnut cream, flavored with rum, faithfully brings out the true goodness of the chestnut, whose sweetness is counterbalanced by a strong blackcurrant flavored with Geneviève berry. The whole, wrapped in a lime-scented vanilla mousse, strikes a light balance between freshness and indulgence, a welcome touch at the end of a meal.
With this creation, Léandre Vivier has succeeded in meeting the challenge of offering us an original vision of the Yule log and the winter season, coupled with an innovative yet not divisive tasting experience, so as to bring us a breath of fresh air while remaining consensual.
