Following on from his beautiful floral Yule log, Léandre Vivier unveils a galette des rois that resembles a bouquet of flowers, the latter made with croissant dough. The Burgundy pastry chef's refined creation is both beautiful and tasty, with a honeycomb pastry that first crunches under the tooth, before giving way to a soft frangipane with pecans and maple syrup. A regressive combo with plenty of character, thanks to the roasted notes of the dried fruit.
