The 2025 galettes des Rois at the Ritz Paris Le Comptoir by François Perret: between tradition and audacity

To get 2025 off to a good start, Pastry Chef François Perret invites us to discover his two new galettes des Rois at the Ritz Paris Le Comptoir. A Vol-au-Vent-style galette, surprising in its originality and refinement, and a traditional frangipane galette, also available in an individual version, ideal for pastry lovers. Available in stores from January 3 to 12, 2025, these creations promise to delight gourmet palates.

Galette des Rois Vol-au-Vent style

With his Vol-au-Vent-style Galette des Rois, François Perret redefines the codes of pastry-making. Inspired by a great savory classic, this galette offers a crisp, airy puff pastry, sheltering a subtly flavored hazelnut frangipane and a delicately tart apple compote. At its heart, a melting praline sprinkled with roasted buckwheat seeds adds incredible intensity and texture. We loved this daring creation, a real editor's favorite.

For lovers of tradition, the Galette des Rois Frangipane is a must. Beneath a crisp, golden puff pastry lies a generous frangipane, sublimated by a touch ofslivered, toasted almonds. An individual version, enriched with a croissant dough outline, is also available, perfect for an easy, gourmet breakfast treat.

Each galette conceals an exclusive bean, representing François Perret's emblematic creations for the Ritz Paris. These beans, both elegant and original, add a precious and playful dimension to this gourmet ritual.
