Valentin Sevilla's Galette des Rois is an ode to traditional patisserie sublimated by a modern technique. This inverted puff pastry, the fruit of seven days' preparation, offers a light, crisp texture, enhanced by a generous filling of Gianduja, a blend of Italian origin combining chocolate and Piedmont hazelnuts. The frangipane, made with Valencian almonds, is delicately flavored with Madagascar vanilla and adorned with a touch of gold leaf. A subtle balance that pays tribute to exceptional products.
A word of advice: pop the galette into the oven and watch the hazelnut praline melt into the heart of the frangipane - a guaranteed success!
This galette is offered as a limited edition. It is available for pre-order within 48 hours of Sunday December 26, 2024, at a price of 56€ for 6 to 8 people. It will be available from January 5 to 8, 2025, at Le First restaurant, 3 rue de Castiglione, in the 1st arrondissement of Paris, between 11am and 3pm. For an on-the-spot tasting, head to the Bar Tuileries, where it will be available by the plate at 11€ a slice until January 20.
