When the restaurant officially opened in 1860, it was not yet called Lucas Carton , but La Taverne de France, housed in a building designed by the architect Charpentier. Under Napoleon III, the restaurant became a favorite haunt of the Parisian elite. 20 years later, in 1880, the restaurant was renamed Lucas by Scaliet, and given a marvellous Art Nouveau decor, with woodwork carved from maple, sycamore and Ceylon lemon, signed Louis Majorelle, which still attracts art lovers from all over the world. Listed as a cultural heritage monument, the woodwork took no less than four years to complete!
Later, during the interwar years, Monsieur Carton acquired the restaurant and, in 1924, added his name to that of the establishment, which became the Lucas Carton we know today and whose gastronomic reputation has never wavered. In the 1960s, a generation of young chefs came to apprentice in the Lucas Carton kitchens, including the famous chef Alain Senderens, who took over from 1985 to 2013.
