After all, what could be more symbolic than sweet words to celebrate love? This pastry is a letter for two to write to round off your Valentine's Day meal!
Made up to the minute, this pastry is composed of a hibiscus infusion mousse, a spiced passion fruit confit , a gianduja and rose petal muesli and a Muxu cookie, a Basque macaroon that means 'kiss'. At the heart of the cushion is a bissap jelly, known for its aphrodisiac virtues...
Light and delicate, this shareable entremet strikes a fine balance between freshness and indulgence. The hibiscus mousse is as soft as a cloud, while the acidity of the passion fruit confit with a hint of Espelette pepper is counterbalanced by the sweetness of the gianduja muesli, which adds a little crunch.
