After all, the new restaurant at theHotel Kube in Paris lives up to its name. There's a before and after to this four-star establishment. Before: the urban crowds of the La Chapelle-Marx Dormoy district. After: a haven of peace where nature seems to have reclaimed its rights.
As part of the hotel's refurbishment last November, Le Kube's dining room was completely redesigned. New menu, new staff and new decor. And the address has pulled out all the stops. Exotic wall plants, chesterfield sofas and army canvas armchairs transport us to the African savannah. A breath of chlorophyll in the middle of the capital! At the side of the bar, where the bartender is busy preparing our cocktail, a pool table beckons before we sit down to eat.
And while the decor takes us thousands of kilometers away, the plates invite us to travel back in time. To kick off the culinary festivities, a homemade terrine, onion soup or lean meat tartare with colored carrot strips and citrus fruits (10 euros). We continue with scallops escorted by a spinach and salsify purée, or a tender beef cheek bourguignon with potato mousseline (20 euros). More regressive is the poule au pot with vegetables for two, reminiscent of our grandmothers' dishes.
For dessert, we combine inspiration with a soft caramel brioche perdu and refreshing yuzu cream, or a more traditional chocolate Marquise (9 euros). The trip wouldn't be complete without a visit to the second floor, where you'll find the famous Ice Kube Bar, a completely frosted room where you can enjoy a nightcap wrapped up in a down jacket. Thermal shock guaranteed.
