Always keen to work with seasonal produce, this year the chef (French Dessert Champion) has decided to team up with his artist friend Thierry Martenon, to create a beautiful log called "Less is more".
A renowned sculptor, Thierry Martenon chooses wood as his material of exception and expression. The wood is close at hand, rough-hewn from the Chartreuse forests surrounding his native village: ash, spruce, walnut, noble materials whose veins and knots tell the story of an essential life, unadorned, authentic and unclassifiable.
Thierry Mandard, Pastry Chef and French Dessert Champion, shares this taste for materials and textures, a taste he forged during his years at the Four Seasons Georges V and those spent working alongside World Pastry Champion Emmanuel Ryon in Russia.
The " Less is More " log features: a praline and coconut crunch, a coconut dacquoise, a Madagascar vanilla cream, a Piedmont hazelnut praline and a grand cru chocolate mousse by Nicolas Berger. Sober, refined and chic, we love it!
This exceptional log is accompanied by other more traditional but no less delicious creations. There are 3 other gourmet logs: Marron-rhum, Vanille-Clémentine- Grand Marnier and intensely hazelnut, all on a light meringue. A non-alcoholic option is available to order. The subtle spirit of Christmas.
Price: €42 for a rolled log for 6 people, to order only, and €65 for the "less is more" log, to be ordered by December 20 at the latest at contact@lesartizans.fr.
