This year, the committed and responsible chocolatier, who takes to heart the need to correctly list only the farms, offers us a creation based on mucilage, the famous white flesh that protects the cocoa bean inside the pod. Dried and fermented, this flesh gives off a surprisingly tangy taste, reminiscent to some of citrus fruit, pear or even lychee.
For his log, the chef used a unique mucilage that comes from an artisanal Brazilian cocoa harvest in Ilheus. It is simply frozen after being extracted from the pod. It is therefore a product of rare purity, with no additives whatsoever, that is used for the creations in this end-of-year collection.
This Mucilage Yule log is composed of a chocolate mousse enhanced by a crunchy cocoa nib in which mucilage and cocoa nib gel nestle. The whole is set on an all-chocolate cookie. An ideal Yule log for real chocolate lovers!
On the chocolate side, you'll fall for the animals of the Savannah. Here, the giraffe fills his sleigh with cocoa pods, and the elephant watches over the cocoa fermentation process... sure to make a delicious treat under the tree!
These creations are made by hand, using cocoa from Cameroon. The white chocolate is a first: it is made withunfiltered, non-deodorized cocoa butter, offering authentic intensity in the mouth. Touches of color are achieved by marrying white chocolate with fruit powder, such as raspberry for the red.
