To satisfy even more taste buds, Nicolas Haelewyn, Pastry Chef at Karamel Paris, is offering not one but two galettes des rois this year!
First of all, Karamel lovers will find the traditional galette. With its inverted puff pastry and frangipane cream, this galette is sure to please. Add raw almond slivers and you've got even more texture. For added indulgence, Nicolas Haelewyn recommends a few cubes of soft Karamel on top before reheating the galette in the oven.
As for novelties, let's make way for , a galette creation featuring Riviera lemon and hazelnut. Beneath an inverted puff pastry, the galette conceals a frangipane cream with roasted hazelnut powder and pure Corsican lemon confit paste.
To top it all off, the Pastry Chef has added delicate opalines caramelized with callune honey.
Finally, as for the beans, this year collectors will discover a beautiful bean in the shape of a Riviera lemon.
