Nicolas Haelewyn, pastry chef at Karamel Paris, invites us to discover his new Christmas creation dreamed up for this 2018 holiday season.
For the third year running, the pastry chef has created a log based on caramel , but not only... This year, Maison Karamel invites us to experience a unique gustatory journey around the Riviera lemon.
Both light and gourmet, this creation features a sumptuous decor. Beneath its vibrant, sunny color, this log unveils a crunchy hazelnut and Karamel bonbon dacquoise cookie combined with a hazelnut and lemon cookie roll.
For even more deliciousness, this creation features lemons from the Riviera, hidden in the heart of a melting cream sprinkled with crunchy lemon zest meringue and a raw Piedmont hazelnut praline.
And to bring it all together, the Pastry Chef has added a few grains of lemon caviar! Embellished with small cubes of pure lemon juice and crunchy hazelnuts, this Yule log is sure to seduce lovers of caramel and citrus!
