For Epiphanie 2024, pastry chef Marc Rivière, head of the House since 2010 and World Pastry Champion, has come up with two galette recipes, available on the big day, but also a little before and a little after, from January 5 to 13, subject to reservation 48 hours in advance.
The first galette des Rois 2024 from Potel et Chabot, the Signature galette, is a galette with almond cream and hazelnuts, and a pure butter inverted puff pastry, on which are geometrically placed blanched and roasted almonds. One of the House's timeless recipes for those who prefer classic frangipane galettes.
The second, more original galette des Rois, the galette Collection, is composed of an almond cream with roasted hazelnut chips, and features melting pieces of pear poached in caramel, delicately spiced flavors and sweet notes of tonka, vanilla, orange zest and star anise. The secret plus? Its rosette of slivered hazelnuts encloses a hazelnut praline at its heart. Did you say gourmand?
