Parisian and Toulouse-based Brasseries Flo, are launching an unprecedented operation from February 22 to March 31, 2017, offering an ephemeral fish menu around the theme of "Lakes and Rivers" .
On this occasion, you can (re) discover fish such as pike-perch, pike, carp, trout and many other species caught in freshwater.
Chefs have had fun bringing up to date recipes with these, which may have been highly prized and then completely forgotten.
In partnership with Le Fumet des Dombes, which for 28 years has been using traditional methods of drying and smoking beech and oak logs on a grindstone, salting, manual boning with tongs, slicing with a knife and other stages of fish processing... Flo's brasseries will be serving up fresh fish every day!

Sommeliers have been working on the best pairings for lake and river fish, and suggest, for example, the estates of Paul Jaboulet Aîné for a Crozes Hermitage Blanc "Les Jalets" 2015 (6.90€ per glass) or Viré Clessé AOC 2015 - Réserve Personnelle - Jean-Luc et Paul Aegerter (8.90€ per glass). Wines are available by the glass or bottle.
