To celebrate the arrival of spring, the Eugène Eugène brasserie in Puteaux has just unveiled its brand new seasonal menu. Here's a sneak peek to whet your appetite?
Expect to discover: raw vegetable salad, quinoa, freekeh and salmon gravlax; semi-cooked foie gras, gingerbread, honey-passion chutney; green asparagus, soft-boiled egg, crispy bacon and Parmesan; ceviche of sea bream, mango, coconut and chia seeds...
Let's go on a little longer: crispy cod, tartar sauce and French fries, veal chop and glazed leafy vegetables, lean salmon and seasonal baby vegetables, braised octopus, potatoes and onion confit, or Armorican-style prawns with vegetable rice.
