Fancy a burger, perhaps? Why not check out Dumbo, which has just opened in the 9th arrondissement? Behind its discreet, minimalist façade, the 17m2 interior is just as minimalist: a stainless steel counter, and two street-food enthusiasts busy in the kitchen: Charles Ganem and Samuel Nataf.
Their idea was not (yet) to offer a new spot for basic burgers in the capital, but to bring to Paris a cooking technique from the United States that is relatively unknown in France: the smash burger, or a patty plated on a hot plancha to make it thin and crispy while retaining its juiciness and flavor.
On the short menu, two burgers, a fried chicken and fries, no more, no less. There's the cheeseburger (130g smash patty, american cheese, ground pepper, sliced raw onions, sliced iceberg lettuce, house pickles, house special sauce, toasted potato bun) and the classic cheeseburger (2 65g smash patties, american cheese, sliced raw onions, ketchup, American mustard, house pickles, potato bun).
For the fried chicken, Dumbo takes its inspiration from the classic southern fried chicken with a French free-range chicken, marinated for several hours in buttermilk, coated in spices and dipped in ranch and fermented hot sauce.
Simple, freshly prepared burgers, to eat in or take away!
