This year, Julien Alvarez, the former pastry chef at Le Bristol who took the helm of the iconic Parisian Maison, has created a bevy of logs and bûchettes featuring Ladurée's must-have macaroon in trompe-l'oeil form, as well as a breathtaking bûche d'exception and new macaron flavors.

Ladurée's "bûche d'exception" is a masterly creation by pastry chef Julien Alvarez. Available as a limited edition, this tall creation features a crunchy praline base and a hazelnut fondant cookie, which host a hazelnut and buckwheat praline cream. The flowing yuzu-mandarin caramel adds a refreshing note. Finally, Reunion blue vanilla chantilly wraps each bite in a light, creamy texture. The log is presented in an elegant white chocolate structure.

La bûche Ispahan - Crisp base with almond slivers, spoonful cookies, raspberry confit, mascarpone chantilly with lychees, embellished with a pink Eugénie.
La bûche Mangue-Yuzu - Crunchy coconut base, lemon cookie from Savoie, mango and passion fruit compote, light mango cream with a touch of yuzu, decorated with a lemon Eugénie.
La bûche Vanille-Pécan - Crunchy pecan base, spoonful cookies with pecan chips, Madagascar vanilla mascarpone chantilly with pecan praline heart, decorated with a vanilla Eugénie.

In addition to his fabulous logs, Julien Alvarez unveils three new Christmas macaroons: one with Christmas cookie flavors and a caramelized white chocolate and muscovado sugar cream, infused with nuances of cinnamon, cloves, cardamom and nutmeg ; the other in Christmas-spiced chocolate with a creamy hazelnut milk chocolate filling, enhanced with orange zest, tonka bean and a hint of Cuméo pepper; and the third in nougat, with a dried fruit filling (pistachios, hazelnuts and almonds), all coated in a chestnut honey nougat cream.
