In a splendid Park Hyatt suite, we discover the work of Pastry Chef Naraé Kim: a Yule log unlike any other. It's neither round nor elongated, but takes the shape of a citrus pulp, worked by hand rather than with a mold: a mise en abîme of the chef's vision of the inside of a citrus fruit.
Originally from South Korea, Naraé Kim has forged an unbreakable bond between the finesse of her origins and the exuberance of French patisserie. Twice winner of world-renowned competitions, she now deploys her talent at the Park Hyatt Paris-Vendôme, where she brilliantly combines creativity and tradition.
The Bûche Coeur d'Agrumes features pine nut crunch, sweet potato and black cardamom cream, sweet potato cookie, candied sweet potato cubes, fromage frais mousse, citrus compote (kumquat, clementine, orange, saffron) and citrus marmalade (clementine, orange, grapefruit and saffron). The sweet potato in its various forms perfectly counterbalances the acidity of the citrus. A daring and successful blend!
