100 years ago, Prime Minister of France Georges Clémenceau, President of the United States Thomas Woodrow Wilson, Prime Minister of the United Kingdom David Lloyd George and Prime Minister of Italy Vittorio Emanuele Orlando were gathered in the Salon Clémenceau at Trianon Palace Versailles to draw up the Treaty of Versailles that put an end to the First World War.
To celebrate this centenary, Trianon Palace offers from June 4 to October 31, 2019 a Centenary menu in the Michelin-starred restaurant: Gordon Ramsay au Trianon Restaurant.
To do so, executive chef Frédéric Larquemin studied many archive documents: menus of major official dinners between 1918 and 1919, Auguste Escoffier’s major historic guide, The Epicurean by Charles Ranhofer to make sure he stays loyal to the past.
Frédéric Larquemin then gives pride of place to Georges Clémenceau’s cook with her Poultry from “Houdan” Soubise of Georges Clémenceau, the Bouchées de la Reine as a tasty nod to Louis XV’s wife Marie Lszczynska’s guilty pleasure and even the dark rum flambed Mazarine, a dessert served on the official opening of the Peace Conference on January 20, 1919.
