Christmas 2019 will be regressive or not, at theHôtel de Berri! And for good reason, Jimmy de Almeida, Executive Chef of the Hôtel de Berri restaurant, has imagined a Yule log in the shape of a snowman, with a pretty golden crown on his head.
To surprise and amaze our taste buds and eyes, Jimmy de Almeida chose to highlight two raw products: macadamia nuts and Madagascar bourbon vanilla.
This pretty log for Christmas 2019 features a soft, low-sugar joconde cookie base in which macadamia nut powder replaces traditional almond powder for a fuller-bodied taste, followed by an airy, gourmet white chocolate and bourbon vanilla cream .
A little surprise for gourmets, at the heart of this log are two inserts: a milk chocolate nougat with oven-roasted macadamia nuts, and a salted butter caramel for a real moment of regressive pleasure.
The whole thing is covered in silvery-white velvet, and adorned with a golden crown in a nod to the Hotel's logo. A log that's sure to find its way onto many a table at the end of the year!
This log can be found from December 9, 2019 at the Schiap restaurant and Le Bizzaz bar, at theHôtel de Berri. Count €15 for an individual slice or €75 for a log for 6 to 8 people.
