Once again this year, chefs Michel and Sebastien Bras and pastry chef Jean-Julien Freydt unveil a galette des Rois for Epiphany 2024 at the Halle aux Grains restaurant in the Bourse de Commerce. And like their 2023 Christmas log, this galette is one of our favorites!
Like the bûche, this galette des Rois 2024 features hazelnuts and buckwheat, in tribute to the history of the Bourse de Commerce, the former Parisian wheat market. One might have thought that the three chefs would opt for Piedmont hazelnuts, renowned for their many gustatory qualities, but they opted instead for pauetet hazelnuts from the South-West, richer in oil.
This fabulous galette des Rois features a bed of puffed buckwheat, hazelnuts and buckwheat praline, all wrapped in a delicate inverted puff pastry made with ground buckwheat (on site!). Inside, buckwheat frangipane and crushed and powdered hazelnuts finish off this creation, as does the pinch of muscovado sugar that adds just the right amount of sweetness.
For the bean, La Halle aux Grains called on designer Lucile Viaud, who created a glass bean jewel that can be worn as a necklace or bracelet, once discovered! A galette for 8 people costs €49, and can be enjoyed on site from December 6, or taken away (by reservation from December 1) from December 27, 2023 to January 14, 2024.
