Once again this year, chefs Michel and Sebastien Bras and pastry chef Jean-Julien Freydt unveil a galette des Rois for Epiphany 2025 at the Halle aux Grains restaurant in the Bourse de Commerce. And like their 2024 Christmas log, this galette is one of our favorites!
Like the bûche, this galette des Rois 2025 features rice and clementine, in homage to the history of the Bourse de Commerce, Paris's former wheat market. Yes, every year, this beautiful Parisian address honors a grain for its Christmas and Epiphany creations. The three chefs continue to highlight French terroir, opting for Camargue rice and Corsican clementines.
The result is a highly original take on the Galette des Rois, offering a wonderful experience for gourmets wishing to go off the beaten track. Made with a crispy inverted puff pastry made with rice flour to reduce the presence of gluten, covered with clementine marmalade and crowned with candied fruit wedges, roasted almonds and caramelized puffed rice, this creation promises to be full of surprises.
A frangipane with whole almonds, accompanied by candied clementines, adds a touch of pizzazz and indulgence, while presenting itself as an extension of the end-of-year festivities. On top, a layer of vanilla rice pudding adds an original, regressive touch. The texture is fluffy, with more chew than a classic galette, and the result is ultra-satisfying on the palate. Don't forget to look out for the bean, a ceramic grain of rice created by Angela Ly, a Beaux-Arts graduate.
The galette des Rois will be available by the slice at the Halle aux Grains on the first two weekends of January for lunch and afternoon tea (17€). It is also available to take away in its 8-person format (55€) from January 1 to 12, 2025. Pre-orders have been available since December 1, 2024, and reservations are mandatory.
