Renowned pastry chef and chocolatier Gilles Marchal opens a new boutique on the Butte de Montmartre, which he calls La Compagnie Générale de Biscuiterie.
Through his artisanal cookie factory, Gilles Marchal wanted to pay tribute to the "Montmartre village" of yesteryear and its mills. The cookies are made with rye flour, in homage to the Moulin de la Galette on the same site, which was in operation in the 18th century. All the cookies also pay tribute to the era, recalling the petticoats of cancan dancers with their flaky texture and names that bring these damsels back to life: Nini patte en l'air, Jeanne avril, Cha U Kao and la Goulue.
And, to delight our eyes even more, the little cakes are prepared and baked several times a day in the workshop, where we can watch the craftsmen and buy a small bag directly (after being seduced by the smell of the preparations coming out of the oven!).
