Just a few years ago, cocktail bars in Paris could be counted on the fingers of one hand. Today, they number in the dozens. The craze for clever beverages continues unabated, but managing to stand out from the crowd and make a name for yourself among all these establishments is no mean feat.
Some establishments are less well known than others, and yet they are just as deserving of having their name at the top of the bill. Such is the case with Résistance.
Nestled in the Marais district since March 2016, the bar has recently changed team. Since the start of the 2017 academic year, it's now the passionate and very likeable young Gautier who officiates behind the bar.
His credo is to give pride of place to French spirits. The bar's menu has also been updated, still featuring three flagship old cocktails like the " Thousand Time Yes " (Macchu Pisco, Blackcurrant Liqueur, Lime, Jasmine Essence, Bitter Lavender, Egg White), but also Old Fashioned creations dreamed up during Old Fashioned Week, like the " Le Vieux Rectangle " cocktail (Bourbon whiskey, Benedictine, Angostura Bitters, Aztec Chocolate, Nutmeg, Absinthe).
But there are also a number of clever new beverages, such as " Triki ", made with three different rums, followed by lime, grapefruit juice, orgeat syrup, Angostura bitter and leaf bitter, or " Le Petit Jardin de David ", a vegan cocktail made with vodka, yellow Chartreuse, fresh carrot and beet juice, Aquafaba and Rhubarb bitter.
Drawing inspiration from his various travel experiences (Australia, Thailand...), Gautier also likes to play the " Your cocktail " game. The idea? The bartender asks you about your tastes, and then makes a tailor-made cocktail just for you!
What's next? Upgrade the decor of the venue and make it a little more intimate, in particular, but also host masterclasses to inspire customers to, perhaps, take their turn in the bartending world!
