A fresh, healthy and gourmet partnership: that's what Yacon & co and Cojean restaurants are proposing for the start of the 2024 school year. These two companies have discovered a shared vision of food: while Cojean is known as THE restaurant for gourmet, balanced cuisine, Yacon & co has been committed for 3 years to the fight against sugar and its ultra-processed alternatives for the benefit of everyone's health!
This young company has developed a 100% natural, organic syrup with a low glycemic index, 4X less sugar & 2X fewer calories than white sugar, and above all, rich in fiber. Made from yacon, a tuber native to the Andes region, this syrup is obtained by extracting the cold-pressed juice, which, once heated to a low temperature, becomes a syrup called yacon syrup.
The Peruvian population, considered to be the motherland of yacon, consumes this tuber as a vegetable, in flour, in syrup, and as an extract of leaves and/or roots for the preparation of yacon infusions. Its taste and texture are somewhere between honey and maple syrup!
Bonus: its high prebiotic fiber content makes it a key ally in improving intestinal flora and digestion. In fact, yacon is rich in FOS / fructo-oligosaccharides, prebiotic fibers beneficial to the intestine. Its low glycemic index makes it a particularly healthy natural sweetener.
Cojean was seduced by both the deliciousness of yacon syrup and its nutritional benefits. Together, they decided to add to Cojean's new menu a delicious fromage blanc with yacon syrup and roasted seeds, with no added sugar (of course!), to introduce us to this unique product, which is still little known, but which deserves to be.
When do you eat this delicious cottage cheese with yacon syrup?
- For a sugar-free breakfast that doesn't raise blood sugar levels
- For a healthy, delicious snack
- For a dessert that ends on a sweet note, without the sugar!
A dessert that has it all, to be discovered at the start of the new school year!
