Silencio restaurant ultimately opens and unveils a terrace

This Fall 2020, famous Paris club Silencio open in 2011 by David Lynch in the 2^nd arrondissement, opened a restaurant: Silencio pop-up. But a few weeks later, lockdown was instated. After launching Silencio à la Maison to delight taste buds over lockdown, Silencio Restaurant is eventually opening from May 19, 2021 in Saint-Germain-des-Prés.

For the record, this new restaurant has decided to shine a light on the young European culinary creation, with an exclusive menu created over the months by new cooking talents settled in Copenhagen, Basque Country, Lille, or even Apulia. And to celebrate the opening of the restaurant and its terrace, the Silencio team invites chefs who cooked after one another over the past months to treat us to a collection of their best dishes.

The menu gathers dishes by David Zilber, Frederik Bille Brahe, Ixta Belfrage, Alex Paganelli (DeadHungry), Giorgia Eugenia Goggi, Mathieu Rostaing-Tayard, Nicolas Pourcheresse and Nadia Sammut.

Recipes are mostly focusing on the sea and plants, paired with nature wines selected by female sommelier Honey Spencer, and are all to be enjoyed from now in small serving portions. For instance - to whet your appetite - you can nibble on French fries, seaweed mayonnaise, fish eggs and chives by Alex Paganelli; squid, almond and miso by Giorgia Eugenia Goggi; rosted cauliflower with chickpea skin crust, candied lemon and zaatar hummus by Nadia Sammut, and even olive oil and nori lemon by Mathieu Rostaing-Tayard.
