Under the Sea is the name of the first immersive restaurant in Paris. An unusual and affordable concept imagined by the Ephemera group. Head to the 13th arrondissement in the heart of a hidden room of the MK2 Bibliothèque for an original experience during a meal.

EphemeraGroup has set itself the challenge of offering restaurants designed around a specific theme in which there is a spectacular scenography with unusual decorations and projections. A concept that can already be found abroad and which is available here in an accessible and affordable way.

Behind Ephemera is a trio of shock. Annaïg Ferrand, Loris De Vaucelles and Jade Frommer, freshly graduated from the Institut Paul Bocuse, decided to launch in 2019, a first immersive ephemeral restaurant during a weekend in Lyon. An immediate success that continued with the installation of a second immersive ephemeralrestaurant that was also quickly filled. Thus was born the desire to create theEphemeragroup with the aim of unveiling several immersive restaurants.

Under the Sea by Ephemera is the name of this first immersive Parisian restaurant. From the tables to the animated floor through the vegetation and corals on the ceiling, you dive 20,000 leagues under the sea. In a space of 700 m2 with a hundred seats, we discover panels scattered with projections in the whole room, revealing us different paintings which evolve throughout the meal. The aperitif starts with whales, the starter is accompanied by the fabulous fauna of the colored reefs while the main course is accompanied by sharks and the dessert by beautiful and bewitching jellyfish. We finish in apotheosis with an explosive rhythmic painting.

The restaurant opens for lunch and dinner. The young associate chef, Loris de Vaucelles, who has worked in the kitchens of Thierry Marx and Sylvestre Wahid, and assisted by his team of 20 people, offers us local and seasonal cuisine. The fish, the stars of his plates, are all from French and sustainable fishing. Next to the restaurant, the bar, also immersive, awaits you for a drink, while enjoying tapas also designed around the thread of the oceans, of course ... The menu is affordable for this kind of concept. Indeed, lunch or dinner in sumptuous animated settings already exists abroad but these are concepts where the wallet often undergoes a slimming cure.

During our visit, we were able to taste recipes designed to transport us to the depths of the sea. After an amuse bouche of leek and seaweed, we were seduced by the salmon trout in gravlax, samphire and celery pickles with its tarragon emulsion.

On the main course, we discover a grilled royal sea bream, marinated with fennel seeds, accompanied by a surprising cannelloni eel beet. The whole is decorated with a beet sauce made with butter.

To finish, we discover a nice dessert that combines lemon gel, confit, mousse and citrus ice cream, meringue and grapefruit supremes and a small lemon madeleine to finish.
