Haton-nous, quiches signed by a MOF

MOF Christophe Haton has opened a small shop behind the Saint-Lazare train station, where he offers a French culinary staple: quiche.

For a quick lunch while waiting for the train - Saint-Lazare station is just around the corner - or a quick, affordable lunch break, Meilleur Ouvrier de France Christophe Haton has opened a little counter in the 8th arrondissement that celebrates a French culinary staple: quiche.

MOF since 2011 and also a trainer at the Ferrandi school, it was in collaboration with his wife Céline that Christophe Haton came up with the idea for this shop with its evocative name: Haton-nous. The idea was to showcase a simple product appreciated by young and old alike.

The Haton-nous menu features 4 quiche recipes that rotate regularly, depending on what's available and the chef's whims. At the moment, a ham-lardons-emmental quiche in the style of a quiche lorraine, a salmon-spinach-mozzarella quiche, an eggplant-pepper-tomato-safran quiche, and a zucchini-carrot-goat-basil quiche.

While prices are very reasonable for this part of Paris (expect to pay €12.50 for a quiche/salad/drink or dessert, and €14.50 for the full menu), the recipes on offer at the time of our visit weren't particularly surprising in their creativity. Last season, however, the chef unveiled some less traditional quiches, such as braised beef cheek and mushroom quiche, petit salé with lentils and carrots, and foie gras with mushrooms and parsley quiche. We'd love to try them!

The quiche dough is slightly crumbly when reheated (not the easiest thing to eat on the go on the street, unless you eat it cold or barely lukewarm), but this one is particularly tasty, buttered as it should be. It has to be said that Haton-nous relies on quality French producers for its flour, butter and vegetables.

Rather generous in size, even in individual format, the quiches are accompanied by a lightly sweetened homemade iced tea and a homemade dessert if you feel like it (muffins, rice pudding, financiers).
