What if we were to lend our support - on International Women's Rights Day and every other day of the year, it goes without saying - to the women who run restaurants in Paris, which are often under-represented and undervalued ?
Now, we can already see some of you taking offense at such an article, wondering "why highlight only restaurants run by women?" and arguing that"a similar article, dedicated solely to male chefs, would be unthinkable." Well, that's the whole idea: to shine the spotlight on those women, famous or not yet, who devote their lives to the complicated profession of cooking, and who have to fight even harder than the men to do it.
Far be it from us to draw up this list to drive a wedge between men and women - quite the contrary. It's here to underline the importance and necessity of diversity in the world of gastronomy, which is only possible if women chefs are finally recognized for their true worth.
