After the traditional Yule log, it's time for the inevitable parade of galettes des Rois, enjoyed in Paris throughout the month of January, to get the New Year off on the right foot! ForEpiphanie 2024, Jeremy Del Val, head pastry chef at Dalloyau and Champion de France du Dessert, unveils an extremely gourmet and devilishly exotic galette.
But what exactly does it contain? A buttery puff pastry with caramelized AOP butter from Poitou-Charente, a cream of almonds from Provence and mille fleurs honey from Oise, scented with vanilla from Tahiti and orange blossom from Tunisia, and to finish it all off, a praline heart with almonds from Provence.
It's a culinary journey between France and the Orient, and more particularly Turkey, the heartland of Paul & Joe brand founder Sophie Mechaly, with whom Jeremy Del Val imagined this original creation. From one bite to the next, the deep flavors of this flowery honey give way to the delicate, discreet notes of orange blossom .
And this galette is as delicious as it is regressive, with its little cat shape and powdered sugar chrysanthemums on top. Inside, winning beans will entitle the winner to a selection of Paul & Joe products and accessories worth €450.
A galette des rois for 6 to 8 people costs €59, available in all Dalloyau boutiques and on Dalloyau.fr from January 3, 2024.
