For Christmas 2023, pastry chef Jérémy Del Val unveils a range of dishes that revive the royal past of the Parisian Maison, which celebrates its 341th anniversary this year. A journey back to 1682, when Dalloyau first appeared at the court of King Louis XIV, and the sumptuous festivities that were held there.
For the coming festive season, Jérémy Del Val is going for originality with a Yule log that isn't really a Yule log at all. The former French Dessert Champion unveils a truly festive cake in the form of Queen Charlotte. This royal charlotte unveils a delicate and delicious combination of pistachio, exotic fruit and Madagascar vanilla.
It features a Sicilian pistachio mousse, a pistachio praline scented with Nordmann fir shoots , a mango & Madagascar vanilla compote, a pistachio cookie and crumble, and sponge cookies. The royal feast ends with the sharing of a base of 33% Madagascar milk chocolate, pistachio chips and feuillantine, shaped to evoke the gates surrounding the Château de Versailles.
Dalloyau's Christmas charlotte costs €150 for 8 to 10 people, and is available to order only.
Of course, other sweets are also on the program, including two new macaron recipes: the Sylvestre macaron, a tribute to the 17th-century draughtsman and engraver Israël Sylvestre, with flavors of Nordmann fir and Sicilian pistachio ; and the Alceste macaroon, named after Jean-Baptiste Lully's lyrical tragedy, with thousand-flower honey, orange blossom and Tahitian vanilla - flavors that echo Dalloyau's Galette des Rois 2024!

And of course, we haven't forgotten Dalloyau's savory score, imagined by the House's executive savory chef, Benoît Ayissi. On the menu, a cocotte de la mer (€180 for 4 people) served in a magnificent cherry-colored Le Creuset cocotte. In detail, a fillet of sea bass, gambas, scallops, orange and yellow carrot, spinach, broad beans, parsnips, salsify, yellow lemon and champagne sauce. Yummy!
