Nina Métayer, twice crowned best pastry chef in the world, delights us with her online Délicatisserie, her pastry counter at Printemps du Goût and her pastry counter at Les Halles d'Issy.
For this Christmas 2024, the pastry chef has redoubled her efforts to offer gourmets 5 logs in a variety of flavors, each with the promise of delighting and surprising our taste buds.
During our discovery, Le Sapin, this year's signature piece, particularly caught our eye. Designed like a sculpture, this three-tiered log blends textures and fragrances. The base combines crunchy blackcurrant pepper shortbread, soft Genoa bread and a compote of caramelized pears subtly spiced with dried black lemon. The mousse, infused with organic fir shoots that we'd have liked to be even more present, evokes the familiar scents of winter. As for the tip of the fir tree, it hides small dark chocolates under a white chocolate shell. This creation, available for 12 people at €150, is a dessert to share.
The chef also offers La Plume, a gluten-free alternative inspired by her stay in Mexico. This dessert pays tribute to her memories through flavors such as grilled corn and chipotle pepper. Its composition, which combines crispy corn, spicy chocolate mousse and fresh lime, is crafted in an elegant and original design. We love it! Available individually at €14 or for 8 guests at €96, this log is a wonderful discovery that we warmly recommend.
Finally, traditional logs complete the range. Chocolate and buckwheat praline, chestnut, vanilla and cognac, and exotic mango and combava are all on the menu, with formats to suit both small and large tables. Each log plays with a variety of textures and revisited classic flavors. Expect to pay €48 for logs for 6 and €8.50 for individual logs, because you've got to test before you buy...
With this collection, we appreciate the care taken and the diversity of the proposals. These creations reflect a sincere attention to flavors, with a personal touch of the chef's own, whose talent is now more than recognized.
