This tag should be added to restaurants such as traditional brasseries and French bistros serving classic dishes from the French cuisine and bistro tradition of Paris. e.g. blanquette de veau, foie gras, oysters, seafood, etc.

Also specify, adding the necessary tag, if the restaurant offers : frogs' legs, snails, oysters, caviar, foie gras, pâté en croûte, mayo eggs, croque-monsieur, onion soup, moules-frites, steak-frites, steak tartare, coq au vin, confit et magret de canard, game, boeuf bourguignon, blanquette, choucroute, quiche lorraine, cassoulet, raclette, tartiflette, fondue, galette bretonne, crêpe, crêpes Suzette.

Unlike bouillons, brasseries and bistrots are not necessarily affordable restaurants.

A traditional Parisian brasserie is often decorated with red banquettes and waiters dressed in black and white suits. The restaurants are sometimes located in historic or even listed buildings.

By contrast, a bistro is a small neighborhood restaurant serving traditional French cuisine. Beware: if the cuisine is too modern, it's a bistronomic restaurant.
