In Paris 5th arrondissement, chef Emile Cotte has decided to open his new bistro and cellar, called Baca’v he inaugurated this past spring.
Trained in the most fantastic starred restaurants, trained to rigor and thorough selection of products by Frédéric Anton at the Pré Catelan, Guy Savoy and Alain Solivérès at the Taillevent, the chef kept feeding his deep relationship to raw products from his region. This is why, when he returned from his native Limousin, chef Cotte has decided to open a table highlighting these wonderful products from regional producers.
Halfway between bistro and cellar, Baca’v serves for lunch and dinner menus on the slate and a menu with more choices, depending on deliveries and the chef’s own favorites: beef cheeks with carrots, veal blanquette, pâté en croute, lobster vol-au-vent, veal kidneys and morels and yellow wine… The kind of mouthwatering dishes available on the menu!
When comes an after-work party, the restaurant serves tapas to enjoy the big terrace, such as updated offal or tapas from the chef’s cousin’s preserves – foie gras producer and poultry farmer.
