Chocolate eclair, coffee eclair, vanilla eclair... we've all got a crush on the classic flavors! To shake up our habits, the Quinzaine des Eclairs celebr ates pastries that can be eaten faster than an éclair, in bakeries from March 9 to 21, 2020.
For 2 weeks, creative artisans join forces to offer 3 shared sweets to be eaten in a flash. And this year, it's all about floral signatures. So no, you don't feel like you're eating flower perfumes, but rather tasting gourmet pastries with subtle scents of rose, orgeat or violet.
This year, the main ingredient is crème pâtissière. And that's just the way we like it: real cream, just the way we like it.
Here's one of them:
Le Lovely: a so-girly creation combining rose mousseline cream, raspberry filling and hints of lychee.
Le Liberty: our big winner, featuring almond and diplomat cream with orgeat syrup, pistachio crunch and praline filling.
Le Betsy: a nod to the delights of the other side of the Channel, with its blueberry croquant and mango custard with a touch of violet.
