This year, for Christmas 2016, Gontran Cherrier wanted to surprise you with a Baba and Grapefruit-style log.
This low-alcohol log is both sweet and bitter, thanks to its light cream and grapefruit peel.
Composition: sweet pastry base with rye flour, almond cream with toasted pumpkin seeds and toasted sunflower seeds, baba soaked in pink grapefruit and Campari syrup, mascarpone cream, pink grapefruit jelly, honey-candied grapefruit segment.
For the more traditional, Gontran Cherrier suggests the profiteroles log.
But that's not all: the artisan baker has also created a Christmas-spiced Carrot cake and original breads, including a brand-new creation with cocoa and chilli.

Carrots, cinnamon, nutmeg, orange peel, raisins and pecans.
La Tourte cacao-piment d'Espelette
The spice is infused during an initial baking process, and the dough is then mixed with traditional flour and cocoa. Fresh or toasted, this bread goes well with poultry, foie gras and cheese.
