This festive brunch, orchestrated by chef Maxime Gilbert, begins with a selection of canapés: raw hamachi with burrata and avocado salsa, or a light ceviche broth, enriched by an exquisite touch of Osciètre caviar. Starters come as a surprise with a poached egg in Christmas garb, enhanced by a fricassee of mushrooms with black truffle and a delicate chicken sauce.
For the main course, guests can choose between roasted Bresse capon with truffled winter vegetables, or salmon Pithiviers with cream of celery and chicken jus. Each plate is a demonstration of the chef's savoir-faire and a tribute to exceptional products. Last but not least, Julien Dugourd adds a sweet touch with a cart of carefully crafted Christmas desserts to end this gourmet moment on a festive and elegant note.
