Chef Johan David has imagined a galette de rois with a crisp, inverted puff pastry enclosing an almond cream delicately spiced with candied lemon zest.

For the decor, Brasserie Rosie's pastry chef has dressed his galette in a crunchy layer of roasted almonds over a hint of praline. Did you say gourmand?
